How to make this crunchy romaine salad

Prepare the ingredients: Rinse and dry the lettuce, cabbage and carrots and dry them thoroughly in paper towels or use a salad spinner.

Shred the carrots and cut the cabbage and romaine lettuce into bite-size pieces.

Combine the dressing ingredients in a small bowl or jar.

Romaine Lettuce -Romaine lettuce adds the right amount of crunch to this salad. In addition to a small head of romaine lettuce, you can add a handful of baby spinach or field greens to add some variety to this salad.

Cabbage – I like red cabbage when making this salad because it adds a nice pop of color. You can also use green cabbage or a combination of both.

Apple Cider Vinegar -I use apple cider vinegar in most of my salads, and it can be substituted with an equal portion of red wine vinegar, rice vinegar, or white wine vinegar if that is your preference.

Instructions
 

For the Salad

  • Make the dressing: combine the 1/4 cup Olive Oil, 1 tablespoon Orange Zest, 1/4 cup Orange Juice, 2 tablespoons Apple Cider Vinegar. 1 tablespoon Honey, 1 teaspoon Dijon Mustard., 1 teaspoon Soy Sauce in a small bowl or jar.
  • Shred 1 Carrot and cut the cabbage and romaine lettuce into bite-sized pieces.
  • Place the vegetables and 1/4 cup Pumpkin Seeds, and 1/4 cup Orange Juice into a large salad bowl.
