Ingredient notes and substitutions

Mozzarella balls -Look for fresh mini mozzarella pearls in the dairy or cheese section of your local grocery store; they are the perfect size for these skewers. If they aren’t available, you can use the larger sized mozzarella balls or a block of fresh mozzarella cheese and cut it into bite-sized cubes.

Prosciutto – There are several varieties of prosciutto available. I prefer thinly sliced Prosciutto di Parma which is made from heritage pigs and naturally cured. However, feel free to use any variety you prefer. You can also use a high quality ham in place of prosciutto.

Tomatoes—Cherry or grape tomatoes work best in this recipe. I don’t recommend cutting full sized tomatoes for the skewers.

Fresh Basil – There are several variations of basil available to choose from, I prefer regular sweet basil, but you can use any variety of basil that you like.

Serving suggestions

Serve prosciutto caprese chicken skewers with a salad course, as a simple side dish or appetizer. They are also a great addition to a cheese board or appetizer spread with assorted appetizers and dips or veggie trays.

Recipe Variations

Here are some variation ideas to add a twist to your prosciutto caprese skewers.

Balsamic Drizzle – After assembling the skewers, add a drizzle of balsamic glaze instead of olive oil for a sweet and tangy flavor.

Fruit – Replace the cherry tomatoes with chunks of melon, pineapple or slices of peaches, apples or pears. You can even use a melon baller or cookie scoop to shape the melon into balls.

Goat Cheese – Replace the mozzarella balls with small pieces of creamy goat cheese for a tangy version.

Olives – Thread pitted olives onto the skewers for a briny flavor.

Avocado – Make it vegan and leave out the meat and use chunks of avocado in place of mozzarella cheese.
